poached eggs - 07:00 PM

is there a trick to poaching an egg which i don't know, or is it just a matter of practice?
i've tried twice now to make poached eggs & each time i end up with heaps of egg white through the water. the egg ends up floating in a cloud of white. the main part of the egg is okay (although sometimes i've ended up with a pocket of water in there) but i really want to avoid getting all the rest of the white floating around in the water.

Do it the way Melanie said but also put a cookie cutter into the frying pan and break the egg into it. You will have a perfectly shaped poached egg then

Melanie and Rachelle are right. Both ways work.
One way (as McDonald's does it, but they do it 6 at a crack) is to set a metal ring (10cm aluminum) on the cooking surface that is big enough for the egg. A little water on the bottom, the egg, cover, and wait a minute.
Not sure if you want the yolk soft or hard, but that is up to you.
Hmmm... Some bacon and a muffin... Oohh!

I tried a few times and gave up and bought an egg poacher. Best purchase ever! Some people told me to put a teaspoon of vinegar into the water, or to stir it up to create a whirpool before sliding the egg in, or to turn it down to a very gentle simmer before adding the egg. I even watched videos on youtube for help. Nothing worked for me though

sounds like the eggs aren't that fresh. you need a really fresh egg, then they sit up nice by themselves and the white doesn't go everywhere. Also, as per Kath, some people put in vinegar in the water which is supposed to stop that bleeding too. I personally don't like the taste. Otherwise get those poachers other people have mentioned..... but my mum says when the yoke bleeds, the eggs isn't very fresh. Mind you we were spoiled because we could just go get some nice fresh eggs from the chook shed.

the other way I've done it is to almost "fry" the egg in a little water in the bottom of a pan, if you know what I mean, with just a quite low heat so the water isn't bubbling madly.
